Miso gochujang salmon recipe

| Make a marinade of miso, soy sauce/mirin, gochujang, sake, sugar and a little splash of sesame oil. I usually do all the others and save the sugar for last, adding sugar until it tastes "bright". | |
| Let the salmon marinate flesh down in the sauce for ideally a day but it's fine even just for a few hours. Then bake it in the oven (skin down) until it reaches 125F internal temp (i have a meat thermometer) | |
| While the salmon is baking, take the leftover marinade and cook it in a pan on the stove to thicken it into a sauce. | |
| Take the fish out, pour the thick sauce over the top, then garnish with chopped green onions or any other greens you like. I use cilantro and edamame and sesame seeds too. |
