| Sauté 10 min. Pressure Cook 35min HP, QR. | |
| Updated with recipe | |
| Braised pork & shrimps | |
| • 1lbs pork, sliced (pork bellies, pork shoulder, spare ribs, any cuts you like) | |
| • 1lbs shrimps, heads on, shelled (optional) & deveined | |
| • ½ head of garlic, chopped | |
| • 2-3 shallots, sliced | |
| • 1 tbsp oil | |
| • 2 tsp annatto powder or paprika | |
| • Fish sauce, black pepper, sugar | |
| 1. Press Sauté mode on IP | |
| 2. Add oil, annatto powder (or paprika), garlic & shallots | |
| 3. Add pork and brown until just cooked through | |
| 4. Season to taste using some water, fish sauce, black pepper, sugar | |
| 5. Simmer until meat is tender to your liking | |
| 6. Add shrimps | |
| 7. Cook until shrimps are done | |
| 8. Transfer to sauce pan so you can use IP for the broth | |
| Note: this is concentrated in flavors. Make sure you make enough juice/sauce here since this will be the foundation of the dish. | |
| Broth | |
| • Pork bones, parboiled | |
| • 1 whole brown onion, peeled | |
| • Fish sauce, sugar, mushroom powder | |
| 1. Put pork bones, salt and onion in IP | |
| 2. Add water to make the amount you want | |
| 3. Hit Pressure Cook, 35min HP, QR | |
| 4. Season broth to taste using fish sauce, sugar, mushroom powder | |
| Noodles | |
| If you use dry flat rice noodles, cook your noodles the way you normally do but after the water comes to a boil and before you add the noodles, add 1 ½ tsp of turmeric for every 1 gallon of water. | |
| If you use fresh flat rice noodles, boil 1c of water (for every bag of noodles). Add 1 tsp of turmeric. Turn off heat and let turmeric solution cool before pouring over noodles. Let the noodles soak (tossing now and then for even color) and turn yellow for 10min then drain off any remaining liquid. | |

| • Quail eggs, freshly boiled or canned | |
| • Garlic chives | |
| • Shredded cabbage, lettuce & banana flower | |
| • Green onions | |
| • Rice sesame crackers | |
| To assemble: noodles first, then garnishes and braised pork and shrimps and its concentrated flavorful liquid. Pour some hot broth over but not a lot. Serve noodles and a small bowl of broth on the side. |
