<p>Idli is a soft, pillowy steamed savory cake made from rice and lentil batter. The lentils used in making idli are urad dal (black gram).
Idli is a traditional breakfast made in every South Indian household including mine. Idli is popular not only in the whole of India but outside India too.
Idli is a naturally vegetarian, vegan, gluten free and makes for one of the healthiest breakfast.<img height="30"; width="30"; src="https://th.bing.com/th/id/OIP.KO-79DXkqTVrs6J-9t58LgHaE7?pid=Api&rs=1">

<li>3 cups rice - preferably par boiled (sela)</li>
<li>1 cup split and husked dhuli urad dal</li>
<li>2 tsp salt</li>
<li>oil</li>

<li>Soak the rice and lentil in water separately for 5-6 hours.</li><img height="30"; width="40"; src="https://www.howtogeek.com/thumbcache/2/200/cc84fef7f619288f2b5cabd4615bc311/wp-content/uploads/2020/01/party-face-emoji.png">
<li>Grind the lentil to a fine smooth paste, and the rice a little coarse (enough to feel a texture, like fine sand).</li>
<li>Mix the two ground ingredients with salt and enough water to form a batter of dropping consistency.</li>
<li>Leave covered, in a warm place to ferment to a spongy batter, overnight.</li>
<li>Steam in an idli steamer and serve hot.</li>
<li>Your delicious idli is ready to serve</li>

Gently mix the batter once. Don’t mix it vigorously or too often as it would remove all the air in the batter. Rub a little oil on each of the idli moulds.
Drop spoonfuls of batter in each mould. Add about 1” deep water in your idli steamer. Place the idli stand in the steamer and close.
Steam on high for 5 minutes.
Reduce heat and steam on low for 10 minutes. Open the steamer carefully and check the idli by inserting a clean knife. If the knife comes out clean, idli is done. Else steam for another couple of minutes.
Remove the steamer from heat and let it stand for 5 minutes. Open and remove the idlis from the mould with a knife.
Serve warm with sambar or chutney.
