Custard

This isn't really a recipe, it's just something I made when I wanted something sweet / creamy-ish but not expensive or SUPER unhealthy.

  • 400 ml milk
  • 24g sugar
  • 2 eggs (one full, one yolk)
  • 12g potato starch
  • teaspoon of bad vanilla, maybe less good vanilla
  1. Scald milk. Meanwhile beat everything except the vanilla together very well.
  2. Temper the eggs (slowly slowly add hot milk to bowl of other stuff
  3. Cook on low-ish heat just until mixture seems like it might boil. If things are steaming that's probably a good sign.
  4. Take off heat, add vanilla and put in cups to cool.
