Directions

  1. Cook your bacon until crispy.
  2. Crack 16 eggs into a large bowl.
  3. Add the blended cottage cheese to the bowl.
  4. Add freshly grated parmesan to the bowl.
  5. Add salt to the bowl.
  6. Add onion powder and garlic powder to the bowl.
  7. Mix the ingredients well.
  8. Pour enough of the egg mixture into a frying pan to cover the bottom, add a lid and fry for about 2 minutes.
  9. Fold the cooked egg into pockets and set aside Toast your bagels.
  10. Add sriracha to the bagel.
  11. Add one egg pocket to the bagel.
  12. Add the crispy bacon on top of the egg pocket.
  13. Top with a cheddar slice.
  14. Cover with a lid until cheese melts.
